His style of cooking is modern and refined using the best of the New Forest and the hotel’s home-grown produce to create dishes that take local provenance really seriously. Matthew’s food engages all the senses, bringing a sense of theatre to the table with dishes such as smoked partridge – served under a cloche, the smell of gorse burning in the New Forest drifts into the air engaging the diner within an age-old practice integral to the national park.
