The appointment of Peter Sim, as the new General Manager for Fonab Castle is a major string to the luxury hotel’s bow.  Peter, who has won many Manager Gold Medals in the Scottish Hotel Awards, has a hugely successful career spanning 25 years in hospitality.  His previous posts include management at Mary Culter House Hotel in Aberdeen, Dunalastair Hotel (Kinloch Rannoch) and the Cuillin Hills Hotel on Skye.  With his considerable skill and extensive knowledge, Peter intends to share his passion for Scottish Whisky by transforming Fonab Castle into a popular destination for fans of single malt Scotch.

Fonab Castle is home to range of exquisite rooms, both in the castle itself and in a brand new contemporary lodge adjoining the main building, providing the glamour of contemporary style mixed perfectly with the historic atmosphere of the castle.  The flagship room features an enormous Victorian style brass bed, a high vaulted ceiling and chic glass studded wallpaper, whilst some of the lodge rooms boast private hot tubs.  Fonab Castle’s dining room is an elegant affair, with floor to ceiling glass walls providing stunning views of the Loch, with a grand piano providing a relaxing ambience.  The hotel will showcase the finest of Scottish cuisine, drawing on the very best of local produce to create dishes that are delivered with finesse and style.  Accompanied by Fonab Castle’s treasured selection of drinks, of course.
